What you have said is absolutely correct. Sometimes it takes a few years to get a fix on the fundamentals. But once there, like you have mentioned, fads don't matter.
Not just amongst the developers you met but in general there is a pervasive attitude of taking these fundamentals casually. Which is sad.
Shane Parish's newsletter yesterday had an interesting thought that read:
"Everyone knows what works. Few do it after it stops being exciting."
Maybe there is some truth to that. But then it's our job to keep repeating these like a broken record :)

Ha, that’s the precise quote for it. The amount of antics and entertainment needed to do fundamentals is ridiculous.
